However, as it is denser than wheat flour, it is often advised not to substitute it 100% without adjusting the liquids and to combine the flour with another gluten-free flour (rice, corn) depending on the recipe.
Raw flour retains the skin of the almond: it is richer in fibre and antioxidants. It is also freshly ground, which ensures the absence of oxidation and a superior aromatic intensity.
