The Lauranne Almond: The sweetness of the South-West
Grown in the heart of our orchards in Lot-et-Garonne, the Lauranne almond is an exceptional French variety. Unlike imported almonds, it offers a sweet flavour, with no bitterness. Our organic blanched almonds are stripped of their fine brown skin (blanching) by a gentle mechanical process that preserves all their nutritional qualities.
Blanched almonds are ideal for almond pastes, financiers, macarons, frangipanes, and tart fillings. Their smooth texture and light colour bring finesse and uniformity to preparations.
Lightly toast the blanched almonds in the oven at 140°, then blend them until you obtain a smooth paste.
This purée can be used as an alternative to butter on your toast, in sauces or desserts.
Yes, they retain the majority of their proteins, fibres and good fatty acids, although blanching slightly reduces some antioxidants present in the skin.
Finally, the blanched almond will be easier to digest than the whole almond with skin.
The Rise of Organic French Almonds in Southwest France
Inspired by the orchards of the Drôme Provençale, we successfully planted our first organic almond trees in 2017. It took a bit of patience before we saw the first fruits appear, but here we are, won over!
For your information,the almond tree blooms as early as February/March.
The tree is therefore exposed in the South-West to very sensitive weather conditions (frost, rain), which can significantly impact yields from year to year.
The blanched shelled organic almond we offer comes from a French variety that is flat and elongated. It will charm you with its creamy and floral side. Blanched, the skin's preparation disappears to leave only the heart of the kernel. Ideal for your pastries !
