FREQUENTLY ASKED QUESTIONS ABOUT OUR ORGANIC NUT PIECES
The term "Shrivelled" is a professional term that refers to the broken pieces or fragments of nuts which, although perfectly edible and tasty, are not whole pieces. The taste quality is absolutely not affected; these pieces are sorted from the same high-quality organic Franquette nuts. This format is simply offered at a more advantageous price because it does not meet the visual standard of whole table nuts.
Yes, freezing is an excellent method to preserve the freshness of the nut for a very long time (over 9 months). Due to their high fat content, walnuts are at risk of going rancid if stored in the open air for too long. To prevent this, place the kernels in an airtight bag or box, remove the air, and put them in the freezer. You can consume them directly after taking them out.
However, if you consume them regularly, this is unnecessary! Our walnut kernels are shelled by Marie-Hélène throughout the year, on demand, to ensure optimal quality and freshness. You can therefore snack on them immediately without needing to freeze them first ;-)
These pieces are ideal for all recipes requiring chopped walnuts. You can incorporate them directly into your mixtures for brownies, cookies, muffins, walnut breads, or use them for stuffing and crumbles. Their small size ensures better distribution and a uniform flavour in all your creations.

A HERITAGE: THE STORY OF THE FRANQUETTE NUT IN PÉRIGORD
The Franquette variety that we cultivate in Dordogne is not an insignificant choice. It is part of the rich heritage of Périgord, a region where walnut cultivation has been documented since the 10th century. The Franquette, valued for generations for its yield, but especially for the delicacy of its kernel and its subtle taste without bitterness, has become the queen of the terroirs of the South-West. Its excellence has naturally been rewarded with the Protected Designation of Origin (PDO) Noix du Périgord. When you savour our kernels, you are not just tasting a fruit, you are perpetuating an ancestral agricultural know-how and the historical flavour of our terroir!
